Illy's story and philosophy

It was 1933 when Francesco Illy founded illycaffè in Trieste. With long history of research and innovation, illycaffè single intent has been handed down through time like a cherished legacy. A unique blend, a distinctive espresso coffee

Every day, throughout the world, more than 6 million cups of illy are served. The illy blend is made from 100% superior Arabica coffee beans, the only kind that guarantees a very low caffeine content: less than 1.5%. Unlike the Robusta variety, Arabica grows better in a mountainous climate. The illy blend is composed of different coffees from finest harvest mixed in a skillful combination.

Selection means election

To ensure that the blend is always of the highest quality, illycaffè has created a new kind of relationship between grower and processor.

Over 1,000 coffee growers gain from the transfer of illy's know-how. These producers compete for an award as an incentive to grow only the best green coffee and pick it by hand to keep the beans intact.

Since Brazil is the world's largest producer of natural Arabica coffees, in 1991 illycaffè instituted the Prèmio Brasil de Qualidade do Cafè para Espresso. This award is given to the producer who grows the finest coffees, which are optioned for purchase.

Green coffee is always bought solely in coffee growing countries and only after in depth chemical and organoleptic tests run both on site in Brasil and in Triesta by a team of expert tasters.

Finally, combined with the knowledge of expert tasters is the precision of a technology exclusively created by illycaffè. With this technology every raw bean is inspected by an electrionic screening system that discards imperfect or not fully ripe beans.

About roasting and cooling

To enable beans from different countries to homogenously develop the substances that create aromas, green coffee is roasted only after blending. The coffee thus obtained is then cooled by controlled airflow. This method, longer and more laborious than cooling with water, helps to safeguard quality and keep the coffee's characteristics intact: the aromatic substances are not altered by water, aromas stay fresh and the coffee absorbs no moisture. Once again, the care taken in processing ensures greater customer satisfaction with more aroma in every illy cup.

Pressurizing : the packaging method par excellence

More aroma, more taste. That's what you experience is an espresso made as illycaffè demands. And there's another reason why: it's called pressurization.

A method of preserving and perfecting the blend that was patented by Francesco Illy; this innovation is exclusive to illycaffè . It consists of replacing the air in the package with pressurized insert gas: a system helps to improve its already excellent qualities. In these pressurized containers, the blend undergoes aging as the volatile aromas are bound to the dissoluble oils to enrich the flavor in the cup.

illycaffè is the first company not only in Italy but in Europe to have received ISO9001 quality certification, awarded by the certifying body DNV (Det Norske Veritas Italia).

Espresso

Espresso is originally a product of Italy, where it is widely consumed, as well as in Latin countries in Europe, though it can be increasingly found in other markets as well. A perfect espresso is featured by a light brown to reddish brown cream, sometimes with dark brown streaks. Long lasting foam 3-4 mm high. Dense body, aromatic, full, sweet and perfumed. Balanced taste and aroma and lingering aftertaste.

Cappuccino

When espresso blended with a swirl of gently steamed milk, capped with a cloud of foam, it is known as Cappuccino. A Cappuccino offers a richer espresso flavor than Caffèlatte.

Caffèlatte

The content of milk is substantially greater than that of the coffee for a Caffèlatte.

Marocchino

Marocchino is an illy espresso with hot steamed milk, milk froth and thick hot chocolate.
